SOIL PROFILE: Deep soil with a silty-loam texture, alkaline and rich in limestone

NUMERO DI VITI PER HA: 1.900 vines per hectare

PRODUCTION PER HECTARE: 7.500 kg per hectares

VINIFICATION: The grapes are softly pressed, then the must ferments in steel for 10-15 days with selected yeasts in steel vats at a controlled temperature of 28-32° C, with pumping over and delestage. Pressing and racking in stainless steel where it remains for 12 months and in which it takes place malolactic fermentation. Finally it goes to the aging zone, where it passes about 36 months in oak barriques

APPEARANCE: Intense ruby red

BOUQUET: Intense and elegant aroma with hints of berries, violets, black pepper, coffee and licorice

PALATE: Full and bodied, it gives smoothness to the palate with well balanced tannins and with a delicate aftertaste of vanilla that combines the intense fruity and spicy aromas

SERVING SUGGESTIONS: Ideal for stale dishes and game such as roasts, stew with polenta, deer gulash, roe deer, wild boar or jugged hare
