VINIFICATION: Grapes crushed, pressed softly. The must is cleared and started to alcoholic fermentation with selected yeasts at a controlled temperature between 16-18° C. Refermentation in pumps for 2 months with selected yeasts at 16 °C

BOTTLE AGEING: 1 month
APPEARANCE: Soft pink with copper glints, with fine and persistent perlage
BOUQUET: Fresh and varying bouquet of fresh fruit, in particular apple, white flowers notes, flanked by elegant hints of small red fruits
PALATE: Fine and silky perlage on the palate. Fresh and savory, harmonious and balanced on the palate. Excellent persistence
SERVING SUGGESTIONS: Ideal wine for finger food aperitifs, appetizers, caprese salad of mozzarella and tomato, first courses such as cold pasta and rice salads, light fish such as cod with olives and fresh cherry tomatoes; a gamble for the strongest palates: try it with gnocchi with duck sauce. An international pairing: accompany it with a croque monsieur or a club sandwich.
