VINIFICATION: The grapes are crushed and destemmed grapes, very softly pressed (max 0.9 bar). The must is then clarified by enzyming and clarification and sent to alcoholic fermentation with selected yeasts at a controlled temperature between 16-18 ° C. At the end of the refinement, the wine is then subjected to a further refinement clarification before refermentation in autoclave with selected yeasts at 16 ° C.

PALATE: Fine and elegant bubble. Fresh, savory with good acidity. Harmonious and balanced

SERVING SUGGESTIONS: Ideal wine for finger food aperitifs, appetizers, caprese salad of mozzarella and tomato, first courses such as cold pasta and rice salads, light fish such as cod with olives and fresh cherry tomatoes; a gamble for the strongest palates: try it with gnocchi with duck sauce. An international pairing: accompany it with a croque monsieur or a club sandwich.
