PRODUCTION PER HECTARE: 9.500 kg per hectare

VINIFICATION: The clusters are de-stemmed and are given a 24-hours cryomaceration at about 5°C. The grapes are then gently pressed, at a maximum -0,9 atmospheres. The must is clarified through enzymatic settling followed by centrifuging, then ferments with cultured yeasts at 15-17°C. This procedure ensures the extraction from the skins of the compounds that make this wine distinctive

BOTTLE AGEING: 3-4 months

APPEARANCE: Straw yellow with greening highlights

BOUQUET: Subtle fragrances of green pepper, ripe melon, banana and tomato leaf

PALATE: Dry and elegant with good acidic grip

SERVING SUGGESTIONS: Ideal with dishes based on vegetables, dishes with aromatic herbs, pork, dishes based on baked fish or risotto
