VINIFICATION: The clusters are gently de-stemmed and pressed, and the must ferments with cultured yeasts in steel fermenters at 28-32°C for 9-11 days, with regular pumpovers and délestage. The wine is pressed off and racked into steel tanks for malolactic fermentation and maturation

BOTTLE AGEING: 3-4 months
APPEARANCE: Deep ruby red tending to purple
BOUQUET: Clean-edged, elegant, herbaceous
PALATE: Dry, with judicious tannins, delicate grassiness
SERVING SUGGESTIONS: Excellent partner to grilled red meat, and sauced first courses, to hare and deer, polenta, pheasant, and snails
